Savory bites of bacon, sweet and delectable bites of maple topped with bits of crunchy pecan. Whoever said salads are boring was definitely wrong! Spice up your barbeque dishes with this summer salad. We promise you won't be disappointed!
Sweet Potato Bacon and Maple Pecan Salad Inspired by Michele Rosen (@paleorunningmama)
Ingredients
- 2 Large Sweet Potatoes
- 6 Slices of Bacon
- ¾ Cup Pecans
- 2 Tbs JEM Organics Maple Pecan Hazelnut Butter
- 1/2 tsp Onion Powder
- 1/2 tsp Paprika
- Salt and Pepper to taste
Directions
- Preheat oven to 425 degrees F
- Cook bacon in pan on the stove
- When bacon is cooked, reserve the grease
- Peel and cube sweet potatoes and put in a bowl
- On a baking sheet, mix 2 Tbs of bacon grease with onion powder, paprika, salt and pepper
- Mix spices with the potatoes and place potatoes on the prepared
- Place potatoes in the oven for 20 minutes or until soft and lightly browned
- Toss pecans with 1 tsp of bacon grease and roast in the oven for 5 minutes
- Chop bacon into bite-sized pieces
- Mix potatoes, pecans, and bacon in a bowl
- Drizzle with maple pecan hazelnut butter
- Top with cilantro or parsley or and serve (can eat on a bed of greens too)
