Coffee Cashew Tiramisu

Tiramisu may be one of our favorite desserts ever. The punch of the coffee liquor, the creaminess of the mascarpone, what more could you want? Well we wanted to add Coffee Cashew almond butter, so that's what we did. The classic flavors remain but this makes it even more decadent, creamy and adds a bit more coffee flavor. It’s a must try twist on a classic!

Ingredients:
  • 4 Egg Yolks (at room temp)
  • 1 cup sugar
  • 1 pound mascarpone cheese
  • 3 cups whipped cream
  • 48 lady finger cookies
  • Coffee Liquor
  • Cocoa powder for top garnish
  • JEM Coffee Cashew Almond Butter
Directions:
  • Beat the egg yolks and sugar in your mixer on medium until it becomes white and thick.
  • Add the mascarpone and beat until everything is combined. It will be thick
  • Gently fold in the whipped cream until combined
  • Pour the coffee liquor in a shallow plate and dip the lady fingers one at a time on each side. You don’t need to soak them for too long otherwise they will get too soggy. Arrange them in a 9x13inch baking dish evenly on the bottom.
  • Add a layer of the mascarpone filling (half the mixture), then drizzle on the JEM coffee cashew butter. *We did enough to basically cover the whole layer*
  • Add another layer of the soaked lady fingers one at a time. Then use the rest of the mascarpone filling to cover the top. Dust with cocoa powder and let sit in your fridge for at least three hours before serving.
